Radish and white bean salad shines with heart healthy ingredients. First, the white kidney beans provide a great source of cholesterol-lowering fiber. Next, radishes support the heart by adding significant nutritional value and protect the heart with antioxidants that also lower cholesterol, regulate blood pressure and blood sugar levels.
2 cups dry white kidney beans (cannellini)
6 cups of water
¾ cup extra–virgin olive oil
2 tablespoons drained capers
2 ½ cups (packed) fresh flat-leaf parsley leaves (Italian parsley), divided
¼ cup white wine vinegar or balsamic vinegar
1 bunch of radishes, trimmed, cut into thin wedges
2 green onions, thinly sliced
¾ cup black olives, pitted, quartered
Salt and pepper to taste
First sort through dry beans for stones and foreign objects. Then rinse the beans in cold water. Drain the beans and add cold water (usually 3 cups of water to 1 cup of dried beans).
Blend olive oil, capers, and about half (1 ½ cup) of parsley in a blender until pureed. Transfer to a large bowl - mix in vinegar, add salt and pepper.
Add radishes, green onions, beans, olives and remaining parsley to bowl and toss to combine. Cover and chill.
